Cooking Steps

  • Season your chicken breasts with salt, pepper, and Italian seasoning on both sides.
  • In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook until golden brown, about 5-7 minutes per side. Remove and set aside.
  • In the same skillet, add a bit more oil if needed. Toss in minced garlic and sun-dried tomatoes, sautéing for about a minute until fragrant.
  • Pour in the heavy cream and bring it to a gentle simmer. Add the spinach and stir until it wilts.
  • Stir in the grated Parmesan until melted and creamy.
  • Return the chicken to the skillet and spoon the sauce over it. Let it cook for another 5 minutes to meld the flavors.
