Preparation

  • Heat a drizzle of olive oil over medium heat in a large pot.

Cooking

  • Add the chicken broth gently, letting it bubble and come to a simmer.
  • Pour in the heavy cream and stir together, allowing the soup to reach a creamy consistency.
  • Sprinkle in the dried basil, oregano, salt, and pepper. Fold in the fresh spinach.
  • Taste and adjust with more salt or pepper as necessary.
  • Ladle into bowls, garnish with a sprinkle of fresh herbs, and enjoy.
