  • 1/2 cup Sun-Dried Tomatoes Look for ones packed in oil for added richness.
  • 2 cups Spinach, fresh Kale can be a hearty substitute.
  • 1 cup Heavy Cream Substitute with half-and-half or coconut milk for a lighter version.
  • 1/2 cup Parmesan Cheese, grated Nutritional yeast can be used for a dairy-free option.
  • 1 teaspoon Italian Seasoning

Preparation

  • Season the chicken breasts with salt and pepper.
  • Heat olive oil in a large skillet over medium heat, and once hot, add the chicken. Sear until golden brown on both sides, about 6 minutes per side.
  • Remove the chicken and set aside.

Cooking

  • In the same skillet, add minced garlic and sauté for about 30 seconds until golden.
  • Add sun-dried tomatoes and sauté for another minute.
  • Pour in heavy cream and stir in Italian seasoning. Bring to a gentle simmer, allowing it to thicken.
  • Return the chicken to the skillet, ensuring it’s nestled in the creamy sauce. Simmer for about 5 minutes until the chicken is cooked through.
  • Fold in fresh spinach until just wilted.
  • Sprinkle in grated Parmesan, stirring until it creates a luscious sauce.

Notes

For extra flavor, you can sauté sliced mushrooms after the garlic. Use infused olive oils for added taste, and consider adding crushed red pepper flakes for a spicy kick. Fresh basil or parsley can brighten the dish.
