  • 2 large eggs for binding; swap with flax eggs for a vegan option

Preparation

  • Preheat your oven to 425°F (220°C).
  • Line a large baking sheet with parchment paper.
  • Trim the ends of the zucchinis and cut them into thin strips.
  • In one bowl, whisk the eggs until frothy. In a second bowl, mix together the breadcrumbs, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.

Breading and Baking

  • Dip each zucchini stick first in the egg, allowing the excess to drip off. Then roll it in the breadcrumb mixture, pressing lightly to ensure it adheres well.
  • Arrange the coated zucchini fries in a single layer on the prepared baking sheet and give them a light spray or drizzle of olive oil.
  • Slide the baking sheet into your preheated oven and bake for about 20-25 minutes, or until they are golden and crispy, turning halfway through.
  • Let them cool for a few minutes before serving.

Notes

Feel free to add herbs or spices to the breadcrumb mixture. Serve with zesty marinara sauce or homemade ranch dressing.
