  • 1 can Canned Chickpeas, drained and rinsed The star player! Chickpeas are full of protein.
  • 1/2 cup Breadcrumbs Adds necessary crunch. Use whole-wheat or gluten-free if desired.
  • 1/4 cup Nutritional Yeast Adds a cheesy flavor without dairy, vegan-friendly.
  • 1/4 cup Chopped Parsley Fresh herbs add brightness.
  • 1 tsp Garlic Powder Enhances flavor.
  • 1 tsp Cumin Adds a warm, earthy taste.
  • to taste Salt and Pepper Essential for flavor balance.
  • as needed Olive Oil For frying to achieve crispy, golden-brown exterior.

Instructions
 

Preparation

  • In a large bowl, mash the drained chickpeas with a fork or potato masher until they’re mostly smooth, leaving a few chunks for texture.
  • To the mashed chickpeas, add breadcrumbs, nutritional yeast, chopped parsley, garlic powder, cumin, salt, and pepper. Mix until everything is well combined.
  • With your hands, form the mixture into small balls or patties, about the size of a golf ball.

Cooking

  • In a large skillet, heat about an inch of olive oil over medium heat until it shimmers.
  • Carefully place the fritters in the oil, cooking until golden brown for about 3-4 minutes on each side.
  • Remove the fritters and place them on a paper towel-lined plate to absorb excess oil. Serve warm and enjoy!

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. They can be frozen; separate each fritter with parchment paper to prevent sticking. Reheat in the oven at 375°F for about 10 minutes until crispy again.
