  • 1 cup Bacon, cooked and crumbled Adds a savory crunch; turkey bacon is a great substitute.
  • 8 oz Cream cheese Creates the decadent, creamy base.
  • 4 cups Broth (chicken or vegetable) Low-sodium options can keep it lighter.
  • 2 cups Cheddar cheese, shredded For that gooey, cheesy goodness.
  • 1 Onion, chopped Enhances the soup flavor with subtle sweetness.
  • 3 cloves Garlic, minced Brings fragrance and depth to your dish.
  • Seasoning (salt, pepper, chives, thyme) Enhances all the ingredients for maximum flavor.

Instructions

Preparation

  • Start by washing and peeling the potatoes. Chop them into bite-sized pieces and set them aside.
  • In a skillet, cook the bacon until crispy. Drain on a paper towel, and crumble into pieces.

Cooking

  • Toss the diced potatoes, cooked bacon, chopped onion, minced garlic, broth, and thyme into the crock pot. Season with salt and pepper.
  • After your soup has cooked on low for 6 hours (or high for 3), add the cream cheese. Stir well until creamy.
  • Mix in the shredded cheddar cheese until melted and combined.

Serving

  • Ladle into bowls, sprinkle with fresh chives or extra bacon, and enjoy.

Notes

For a healthier twist, consider using cauliflower instead of potatoes, or opt for a plant-based cream cheese. Adjust cooking times based on your schedule for deeper flavor. Leftovers hold up wonderfully and can be frozen for later meals.
