  • 8 oz Mushrooms, fresh (button or cremini) Portobello can be used for a meaty bite.
  • 2 cans Cream of Mushroom Soup Low-fat varieties or homemade soup can be used for a healthier option.
  • 3 cloves Garlic, minced Enhances the dish’s warmth.
  • 1 medium Onion, chopped Yellow or sweet onions work best.
  • 1 cup Chicken Broth Low-sodium is a great choice.
  • 1 cup Sour Cream Can substitute with Greek yogurt.

Instructions
 

Preparation

  • Begin by dry-rubbing your chicken with salt and pepper.
  • In a large skillet over medium heat, sauté the chopped onion and minced garlic until fragrant.
  • Add the sliced mushrooms to the skillet and cook until softened, about 5 minutes.
  • Mix in thyme and paprika for added warmth.
  • Place the chicken breasts at the bottom of your Crock Pot and pour the sautéed mixture over it.
  • In a separate bowl, whisk together the cream of mushroom soup and chicken broth, then pour this over the chicken.

Cooking

  • Cover and cook on low for 6-8 hours or high for 3-4 hours.
  • About 30 minutes before serving, stir in the sour cream or Greek yogurt.

Notes

Feel free to add spinach or kale before serving for a pop of color; a splash of white wine can elevate the dish further.
