Ingredients

Main Ingredients

  • 2 pounds beef stew meat (chuck roast works well too)
  • 1 medium onion, chopped (for that sweet aromatic base)
  • 3 cloves garlic, minced (because you can never have too much garlic)
  • 8 ounces mushrooms, sliced (for an earthy depth, you can substitute with cremini)
  • 3 cups beef broth (homemade or store-bought)
  • 1 tablespoon Worcestershire sauce (adds a savory punch)
  • 1 teaspoon dried thyme (a sprinkle of this will transport you)
  • to taste Salt and pepper
  • 1 cup sour cream (creamy goodness)
  • 2 tablespoons all-purpose flour (to thicken the sauce)
  • to taste Fresh parsley, chopped (for garnish)

Instructions

Preparation

  • Start by chopping your onions and garlic, and slicing the mushrooms.
  • In a skillet over medium heat, add a bit of oil and sear the beef until browned on all sides (2-3 minutes per side). This step is optional.
  • Add the beef, onions, garlic, mushrooms, beef broth, Worcestershire sauce, thyme, salt, and pepper into the Crockpot. Stir well to combine.

Cooking

  • Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  • About 30 minutes before serving, mix the sour cream and flour in a small bowl, then stir it into the Crockpot, allowing it to simmer.
  • Garnish with fresh parsley and serve.

Notes

You can swap sour cream for Greek yogurt for a lighter version, and feel free to add seasonal ingredients like cranberries or pecans for a festive touch. Serve over egg noodles or mashed potatoes.
