  • 1 lb ground beef Feel free to substitute with ground turkey or a plant-based alternative.
  • 1 can (15 oz) black beans, drained and rinsed Can substitute with pinto beans.
  • 1 can (14.5 oz) diced tomatoes Opt for fire-roasted tomatoes for a smoky flavor.
  • 1 can (15 oz) corn, drained Frozen corn works well too.
  • 1 packet taco seasoning Homemade spice mix can be used for a healthier version.
  • 1 cup shredded cheddar cheese Swap for dairy-free cheese if needed.
  • tortilla chips Crushed tortilla chips can add crunch.
  • fresh toppings (optional) Sour cream, avocado, or cilantro to garnish.

Preparation

  • In a skillet over medium heat, brown the ground beef until cooked through and no longer pink. Drain excess grease if necessary.
  • In your crockpot, combine the cooked beef, black beans, diced tomatoes, corn, and taco seasoning. Stir well to mix everything together.
  • Add a layer of crushed tortilla chips on top of the mixture for a delightful crunch.
  • Sprinkle shredded cheddar cheese generously over the crushed chips.
  • Cover the crockpot and set it to low for 6-8 hours or high for 3-4 hours. The longer it cooks, the more the flavors meld together.
  • Once cooked, scoop out portions, and top with your favorite garnishes like sour cream, diced avocado, or fresh cilantro.

Notes

You can prepare this casserole ahead of time. Store leftovers in the fridge for up to 3 days or freeze for up to 2 months. Reheat in the microwave or oven.
