Ingredients

Main Ingredients

  • 2 pounds boneless chicken breasts the star of the show, tender and juicy.
  • 1 cup chicken broth brings moisture and flavor.
  • 1 tablespoon minced garlic because garlic makes everything better.
  • 1 cup heavy cream creates a luscious sauce.
  • 1 cup grated Parmesan cheese for that rich, cheesy goodness.
  • 12 oz pasta of choice I love fettuccine, but any shape you love works.
  • 1/4 teaspoon black pepper adds a gentle kick.
  • to taste Fresh parsley for garnish.

Substitutions

  • 1 cup Greek yogurt Use instead of cream for a lighter version.
  • 12 oz whole wheat pasta Swap in for a healthier option.
  • 1 cup vegetable broth Use to omit chicken for a vegetarian treat.

Instructions

Cooking Steps

  • Place the boneless chicken breasts at the bottom of your crockpot.
  • In a bowl, mix together the chicken broth, minced garlic, black pepper, and half of the Parmesan cheese.
  • Pour this mixture over the chicken, ensuring it’s well coated.
  • Cover and cook on low for 4 hours or high for 2 hours until the chicken is tender.
  • Shred the chicken directly in the crockpot – it should fall apart easily!
  • Stir in the heavy cream and uncooked pasta. Cook on high for an additional 30-40 minutes or until the pasta is al dente.
  • Stir in the remaining Parmesan cheese, and garnish with fresh parsley before serving.

Notes

Add veggies like spinach, mushrooms or broccoli for added nutrients. If you love heat, add a pinch of red pepper flakes. Try fresh basil or thyme for an aromatic lift.
