Ingredients
  

For the Crudités

  • 2 medium Carrots Peel for a smooth texture or leave the skin on for crunch.
  • 1 large Cucumber Persian cucumbers can be used for a sweeter bite.
  • 1 each Bell Pepper (yellow) Any color works beautifully.
  • 1 each Bell Pepper (red) Any color works beautifully.
  • 1 cup Cherry Tomatoes Can swap with radishes for a peppery kick.
  • 2 medium Celery Sticks Essential for that satisfying crunch.

For the Herb Dip

  • 1 cup Greek Yogurt Substitute with sour cream for a tangier flavor.
  • cup Fresh Herbs, chopped Basil, parsley, dill, or chives work well.
  • 1 clove Garlic, minced Feel free to use garlic powder if fresh isn’t available.
  • 1 tablespoon Lemon Juice Lime can be a zesty alternative.
  • Salt and Pepper Season according to taste.

Preparation

  • Wash and cut your vegetables: slice the carrots into sticks, chop the cucumbers, slice the bell peppers, and trim the celery.
  • Optional: Soak the cut vegetables in ice water to keep them crisp.

Herb Dip Preparation

  • In a medium-sized bowl, mix Greek yogurt, minced garlic, fresh herbs, lemon juice, salt, and pepper until combined.
  • Taste and adjust the seasoning depending on your preference.

Serving

  • Artfully arrange the vegetable sticks on a large serving platter.
  • Place the herb dip in a bowl at the center of the platter.
  • Enjoy with your loved ones!

Notes

For a lighter dip, use low-fat Greek yogurt or cottage cheese. Consider seasonal additions like zucchini in summer or roasted bell peppers in fall.
