Preparation

  • Wash the cucumbers and strawberries thoroughly.
  • Slice the cucumbers and hull the strawberries. Then, slice the strawberries into thin pieces.

Combining Ingredients

  • In a large mixing bowl, add the sliced cucumbers, strawberries, red onion, and chopped mint.

Dressing the Salad

  • In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and black pepper.
  • Drizzle this mixture over the ingredients in the mixing bowl.

Final Mixing

  • Gently toss everything together until well combined.

Serving

  • Arrange the salad on a serving dish and sprinkle crumbled feta on top if using.

Notes

You can mix all the ingredients except for the dressing a few hours before serving to keep it fresh. Store leftovers in an airtight container in the fridge for up to two days.
