Muffin Base

  • 2 cups all-purpose flour This is the base, giving the muffins their structure.

  • 1 cup sour cream Replace with Greek yogurt for a lighter twist.

  • 2 tsp baking powder To help those muffins rise perfectly.
  • 1/2 tsp baking soda For an extra lift.
  • 1/2 tsp salt Enhances all the flavors and balances sweetness.
  • 1 tsp ground cinnamon The cozy spice that ties it all together.
  • 1/2 cup chopped nuts (optional) Add walnuts or pecans if you like a little crunch.

Streusel Topping

  • 1/2 cup sugar For sweetness in the topping.
  • 1/2 cup flour Provides the structure for the topping.
  • 1/4 cup softened butter To achieve a crumbly texture.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
  • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  • Add the eggs one at a time, mixing well after each addition.
  • Stir in the sour cream and vanilla extract until well combined.

Combine Dry Ingredients

  • In another bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nuts (if using).

Mix and Bake

  • Gradually incorporate the dry ingredients into the wet mixture, being careful not to overmix.
  • Spoon the batter into prepared muffin tins, filling them about two-thirds full.
  • For the streusel topping, mix together 1/2 cup sugar, 1/2 cup flour, and 1/4 cup softened butter until crumbly and sprinkle atop each muffin.
  • Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow to cool in the pan for a few minutes before transferring to a wire rack.

Notes

Feel free to experiment! Add fruits like blueberries or chopped apples, or use chocolate chips for added flavor. Store in an airtight container for up to 3 days or freeze individually for up to 3 months.
