Preparation

  • In a large pot, heat the olive oil over medium heat. Once shimmering, add the diced onion and sauté until translucent, about 3–4 minutes.
  • Stir in minced garlic and cook for an additional minute until fragrant.
  • Add the ground meat, breaking it apart as it cooks, until browned and fully cooked (about 5–7 minutes).

Cooking

  • Pour in the crushed tomatoes and chicken broth, stirring to combine. Add the Italian seasoning and bring to a simmer.
  • Stir in the cream cheese and let it melt into the broth, creating a delightful creaminess.
  • Slowly add the broken lasagna noodles and cook for 10 minutes, or until tender.
  • Fold in the spinach or kale and let it wilt for a few minutes.
  • Taste and adjust seasoning as necessary, then serve with a sprinkle of Parmesan cheese on top.

Notes
