  • 1 teaspoon ground cumin For earthy depth.
  • to taste salt and pepper Enhances flavor.
  • Fresh cilantro for garnish Adds color and freshness.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large skillet over medium heat, cook the ground beef with the chopped onion and minced garlic until the beef is browned and the onions are translucent, about 5-7 minutes.
  • Drain any excess fat and stir in 1 cup of enchilada sauce, cumin, salt, and pepper. Let the mixture simmer for a few minutes to meld the flavors.
  • Spread a little enchilada sauce on the bottom of a baking dish to prevent sticking.
  • Take one tortilla, spoon some of the beef mixture in the center, sprinkle with cheese, and roll it up tightly. Place it seam-side down in the baking dish. Repeat with the remaining tortillas.
  • Once all enchiladas are in the dish, pour the rest of the enchilada sauce over them and top with remaining cheese.
  • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  • Let cool for a few minutes before serving. Garnish with fresh cilantro.

Notes

Feel free to add vegetables such as bell peppers or zucchini to the beef mixture for added nutrition. These enchiladas freeze beautifully for later enjoyment.
