  • 12 ounces your favorite pasta (spaghetti, penne, or whole wheat) This will serve as the hearty base.
  • 2 cups fresh broccoli florets Packed with vitamins and a beautiful pop of color.
  • 3 cloves minced garlic A generous infusion of flavor!
  • 3 tablespoons olive oil Use extra virgin for the best taste, or substitute with avocado oil.
  • ½ cup grated Parmesan cheese For a dairy-free version, try nutritional yeast.
  • pinch red pepper flakes Optional, if you like a little heat.
  • salt & pepper To taste.

Preparation

  • In a large pot, bring salted water to a boil. Add your pasta and cook according to the package instructions until al dente. Reserve about ½ cup of pasta water, then drain the rest.

Cooking

  • In a large skillet over medium heat, add the olive oil and minced garlic. When the garlic begins to sizzle and turn golden, toss in the broccoli florets. Sauté for about 3–4 minutes until they’re vibrant and tender but still crisp.
  • Add the drained pasta to the skillet with the broccoli. Pour in the reserved pasta water for a bit of sauciness and mix well.
  • Sprinkle the grated Parmesan cheese over the pasta and mix until it melts into a creamy coating. Season with salt, pepper, and red pepper flakes according to your preference.
  • Divide the pasta among plates, adding a sprinkle of extra Parmesan and some fresh herbs if you have them.

Notes

For extra flavor, you can add protein such as grilled chicken or shrimp. Consider adding fresh herbs for a vibrant finish.
