Preparation

  • Preheat your oven to 400°F (200°C).
  • In a mixing bowl, combine 1 cup of cottage cheese, 1 cup of shredded cheddar cheese, 2 tablespoons of nutritional yeast, and 1 teaspoon each of garlic powder, salt, and pepper. Stir until it’s a cohesive mixture.
  • Line a baking sheet with parchment paper and lightly grease it with olive oil or cooking spray.
  • Scoop tablespoon-sized portions of the cheese mixture onto the prepared baking sheet, leaving enough space in between each dollop for spreading.
  • Use the back of a spoon to flatten each dollop into a thin circle, about 1/4 inch thick.

Baking

  • Bake in your preheated oven for 15-20 minutes or until they are golden brown and crispy.

Notes

Store any leftover chips in an airtight container at room temperature for up to three days, though they are best enjoyed fresh. For longer storage, you can freeze them for up to a month. Just reheat them in the oven for a few minutes to recapture that delightful crunch.
