  • 4 large eggs Fresh and organic for the best flavor.
  • 1 cup shredded cheddar cheese Substitute with your favorite cheese or a mix.
  • 1/2 cup cooked bacon or sausage Adds a savory touch; can be omitted for a vegetarian version.
  • 1/4 cup green onions, chopped Substitute with chives if preferred.
  • Salt and pepper To taste, essential for enhancing flavors.

Preparation

  • Preheat your oven to 375°F (190°C).
  • Place your pie crust in a 9-inch pie pan and sprinkle a little salt on the bottom.
  • In a mixing bowl, take your cooked baked potatoes and roughly mash them with a fork.
  • In another bowl, whisk together the eggs, heavy cream, salt, and pepper until well combined.
  • Gently fold the mashed potatoes, cheese, cooked meat (if using), and green onions into the egg mixture.
  • Carefully pour the filling into the prepared pie crust, spreading it evenly.

Cooking

  • Place the quiche in the preheated oven and bake for 25 minutes or until the top is golden brown.
  • Remove from the oven and let it cool for about 10 minutes before slicing.

Notes

Herb upgrades like rosemary or thyme elevate the flavor. For added nutrition, mix in sautéed veggies. Experiment with cheeses such as feta or gouda.
