  • 1 cup broccoli florets Fresh or frozen will work; just ensure they are thawed.
  • 1 cup cauliflower rice This adds the low-carb element; you can also use regular rice if you don’t mind the carbs.
  • 1 cup shredded cheese Sharp cheddar recommended for rich flavor; feel free to experiment!
  • 1/2 cup sour cream For creaminess; Greek yogurt is a healthy swap if you prefer.

Seasonings

  • 1 teaspoon garlic powder Fresh minced garlic adds depth too!
  • 1 teaspoon onion powder A subtle flavor enhancer.
  • to taste Salt and pepper Essential seasonings!

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease a 9x13 inch casserole dish with olive oil or cooking spray.
  • In a large mixing bowl, combine the cooked chicken, broccoli, cauliflower rice, sour cream, garlic powder, onion powder, salt, and pepper. Mix until well combined.

Assembly

  • Fold in half of the shredded cheese into the mixture.
  • Pour the mixture into the greased baking dish, spreading it evenly.
  • Sprinkle the remaining cheese on top.

Baking

  • Place the casserole in the preheated oven and bake for 30 minutes.
  • Allow the casserole to cool for a few minutes before serving.

Notes

Add diced bell peppers or spinach for added color and nutrients. You can spice it up with a pinch of cayenne or chili powder. Experiment with different cheese varieties for unique flavors. Top with fresh herbs before serving for added freshness.
