  • 12 oz Pasta (spaghetti, penne, or fusilli) Choose a pasta that holds sauce well.
  • 2 tbsp Olive Oil Use extra virgin for enhanced flavor.
  • 3 cloves Garlic, minced The heart of our flavor.
  • 28 oz Canned Diced Tomatoes Fire-roasted for a smoky twist, or use fresh ripe tomatoes.
  • 4 cups Vegetable Broth Chicken broth can be used as an alternative.
  • 1 cup Heavy Cream For a lighter option, Greek yogurt can be used.
  • 1/2 cup Parmesan Cheese, freshly grated Nutritional yeast can be used for a vegan option.
  • 1 tbsp Basil Fresh or dried for flavor.
  • 1 tbsp Oregano Fresh or dried.
  • to taste Salt and Pepper Seasoning is key!

Preparation

  • In a large pot, heat two tablespoons of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  • Pour in the canned diced tomatoes (juice and all) and stir to combine. Allow this to simmer for a couple of minutes.
  • Stir in your pasta and add the vegetable broth. Bring the mixture to a boil.
  • Add the dried oregano, basil, salt, and pepper to taste.
  • Once the pasta is al dente (about 10-12 minutes), reduce the heat to low. Stir in the heavy cream and freshly grated Parmesan cheese. Mix until the cheese has melted and the sauce is silky smooth.
  • Serve the pasta into bowls, garnishing with additional basil and a sprinkle of cheese.

Notes

Tips: Add spinach, zucchini, or bell peppers for extra nutrition. For a spicy kick, include crushed red pepper flakes. For protein, consider grilled chicken, shrimp, or chickpeas.
