Ingredients

Main Ingredients

  • 2 medium Zucchini Grated and packed with moisture
  • ½ cup Parmesan cheese Shredded for flavor
  • ¼ cup All-purpose flour Can substitute with almond flour for gluten-free
  • 1 large Egg Binding agent
  • 2 cloves Garlic Minced for aromatic flavor
  • 2 Green onions Chopped for flavor and color
  • Salt and pepper To taste
  • Olive oil For frying

Instructions

Preparation

  • Grate the zucchini and place it in a clean kitchen towel to squeeze out excess moisture.
  • In a large bowl, combine grated zucchini, Parmesan, flour, minced garlic, chopped green onions, salt, and pepper. Add the egg and mix until well combined.

Cooking

  • In a non-stick skillet, heat enough olive oil to cover the bottom over medium heat.
  • Scoop the batter and form small patties, then fry in batches to avoid overcrowding.
  • Cook each fritter for 3-4 minutes on each side until golden brown and crispy.
  • Transfer cooked fritters to a paper towel-lined plate to drain excess oil.
  • Serve warm, potentially with yogurt or lemon.

Notes

For a gluten-free version, replace all-purpose flour with almond flour. Nutritional yeast can be used for a dairy-free alternative. Store leftovers in an airtight container for up to 3 days, or freeze for longer storage.
