Easy Slow Cooker Chicken Noodle Soup

Ingredients

  • 1 to 1.5 pounds chicken breasts or thighs
  • 8 cups chicken broth
  • 3 carrots, sliced
  • 2 to 3 celery stalks, sliced
  • 1 small onion, chopped
  • 3 cloves garlic, minced (or 1 teaspoon garlic powder)
  • 1 teaspoon salt, plus more to taste
  • 0.5 teaspoon black pepper
  • 1 teaspoon dried parsley or Italian seasoning
  • 2 cups egg noodles Add at the end
  • Optional: a squeeze of lemon, a pinch of dried thyme

Instructions
 

Preparation

  • Add broth, carrots, celery, onion, garlic, and seasonings to the slow cooker.
  • Nestle the chicken right in.

Cooking

  • Cook on low for 6 to 7 hours or on high for 3 to 4 hours.
  • Shred the chicken with two forks right in the pot.
  • Stir in noodles and cook another 15 to 25 minutes, until tender.
  • Taste, then add a little more salt or a squeeze of lemon if it tastes flat.

Notes

If you add the noodles too early, they get soft and kind of disappear. Always add them at the end. If planning for leftovers, cook noodles separately and store them apart.
