Preparation

  • Pat the chicken thighs dry with paper towels and season lightly with salt and pepper.
  • In a small bowl, whisk together soy sauce, honey, minced garlic, rice vinegar, sesame oil, grated ginger, and red pepper flakes. Taste and adjust the balance of sweet and salty.

Cooking

  • Heat a large oven-safe skillet over medium-high heat. Add a drizzle of oil, then place the thighs skin-side down. Cook for 6 to 8 minutes until deeply browned.
  • Flip the thighs and pour the soy-garlic sauce into the pan, spooning it around the chicken to coat. The sauce will hiss and begin to reduce.
  • Transfer the skillet to a preheated 375°F (190°C) oven and bake for 20 minutes, or until the internal temperature reaches 165°F (74°C). Baste with the glaze in the pan.
  • If the sauce needs thickening, remove the chicken to a plate, simmer the sauce on the stovetop, stir in the cornstarch slurry, and cook until glossy. Return the thighs to the pan to coat.

Garnishing and Serving

  • Garnish with sliced green onions and sesame seeds, and serve hot.
