  • 1 bell pepper, diced bell pepper Choose any color for sweetness and a pop of color.
  • 1 teaspoon garlic powder For that essential savory goodness.
  • 1 can (14.5 oz) diced tomatoes Provides moisture and enhances the flavor profile.
  • 1 cup beef broth Elevates the richness of the dish.
  • Salt and pepper To taste.
  • Optional toppings: chopped cilantro, sliced olives, or shredded cheese For added richness.

Preparation

  • In a large skillet, heat a drizzle of olive oil over medium heat. Once hot, add the diced onion and bell pepper. Sauté until they’re tender and aromatic, about 3-4 minutes.
  • Add the ground beef to the skillet, breaking it up with a spatula as it browns. Cook until it’s no longer pink, about 5-6 minutes. Drain excess fat if necessary.
  • Stir in the garlic powder and the Spanish Rice A Roni mix, letting them toast for about a minute. Your kitchen will smell amazing at this point!
  • Add the can of diced tomatoes (with juices) and the beef broth, stirring everything together well.
  • Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 15 minutes, or until the rice is tender and the liquid has absorbed.
  • Season with salt and pepper to taste, and fluff the rice with a fork before serving.

Notes

Tips: Add diced carrots, peas, or corn for extra nutrition and color. For a kick, toss in some diced jalapeños or a dash of cayenne pepper. Stir in some shredded cheddar cheese towards the end for a melty finish. Use brown rice or cauliflower rice for a wholesome twist.
