  • 1 cup Cottage Cheese For a dairy-free alternative, use almond or soy-based cottage cheese.
  • 2 cloves Garlic, minced Feel free to use garlic powder as a substitute.
  • 2 tablespoons Olive Oil Alternatively, use avocado oil.
  • Salt and Pepper Adjust to taste.
  • Red Pepper Flakes Optional for added heat.

Preparation

  • Rinse the fresh spinach thoroughly under cold water. Drain and set aside. If using frozen spinach, ensure it’s thawed and drained.

Cooking

  • In a large skillet, heat olive oil over medium heat. Once hot, add minced garlic and sauté until golden and fragrant, about 1 minute.
  • Add the fresh spinach to the skillet. Stir and cook for about 3-4 minutes, or until wilted. If using frozen spinach, transfer it to the skillet and warm it through.
  • Stir in the cottage cheese, mixing until combined. Let it cook for another 2-3 minutes until heated through.
  • Sprinkle with salt, pepper, and red pepper flakes if desired. Mix well, then remove from heat.
  • Serve warm over your favorite pasta, on toasted bread, or paired with grilled chicken.

Notes

For added flavor, incorporate shredded mozzarella or parmesan cheese, fresh herbs like basil or dill, and seasonal vegetables for a colorful upgrade. Refrigerate leftovers for up to 3 days or freeze for later.
