Base Ingredients

  • 1 tablespoon olive oil For cooking

  • 4 cups low-sodium chicken or vegetable broth Controls saltiness

Flavor Enhancers

  • 1 8-ounce can tomato sauce Thickens and deepens the base

Instructions
 

Cooking

  • Heat the olive oil in a large pot over medium heat.
  • Add the diced onion and sauté until translucent, about 4 minutes.
  • Add the garlic and cook for 30 seconds until fragrant.
  • Crumble in the ground beef or turkey and cook until browned, breaking it up with a spoon. Drain excess fat if needed.
  • Stir in the taco seasoning, letting it toast for a minute to deepen the spices.
  • Add the diced tomatoes with chilies, tomato sauce, tomato paste (if using), broth, black beans, pinto beans, and corn. Stir to combine.
  • Bring to a gentle boil, then reduce heat and simmer for 10 minutes to let flavors meld.
  • Taste and season with salt, pepper, and lime juice.
  • Serve hot with your favorite toppings.

Notes

Storage: Store in an airtight container for up to 4 days. Freeze for up to 3 months. Reheat gently adding broth if needed.
