  • Lay out your ingredients on a clean countertop to make the assembly process smooth and enjoyable.
  • Take a flour tortilla and spread an even layer of vegan cream cheese across it, leaving about an inch around the edges.
  • Spread the fresh spinach first, followed by a generous sprinkle of diced red bell pepper, grated cucumber, and carrot.
  • Add your chopped fresh herbs, followed by a dash of salt and pepper to taste.
  • Starting from one edge, gently but firmly roll the tortilla away from you, tucking in the filling as you go to create a tight, filled log.
  • Using a sharp knife, slice the rolled tortilla into 1-inch pinwheels.
  • Arrange the pinwheels on a platter and serve as-is or with your favorite dipping sauce.
