  • 1 tablespoon olive oil or any cooking oil of your choice
  • 1 medium onion, diced
  • 2 cloves garlic, minced adds a warm aroma!
  • 2 medium carrots, sliced
  • 2 stalks celery, chopped
  • 1 medium bell pepper, diced colorful options like red or yellow enhance the visuals
  • 1 medium zucchini, diced a fantastic way to sneak in veggies
  • 1 can diced tomatoes or 2 fresh tomatoes, chopped
  • 4 cups vegetable broth use low-sodium for a healthier option
  • 1 teaspoon dried thyme or mix it up with your favorite herbs
  • Salt and pepper to taste
  • 1 cup green beans or kale optional for added nutrition

Preparation

  • In a large pot, heat the olive oil over medium heat.
  • Add the diced onion and garlic, stirring until they're soft and fragrant — about 3-4 minutes.
  • Toss in the carrots, celery, and bell pepper. Stir occasionally, and let them soften for another 5 minutes.
  • Now, add the zucchini and diced tomatoes into the mix. Stir everything well, letting the flavors marry for 2-3 minutes.
  • Add the vegetable broth and the dried thyme. Bring the concoction to a boil, then reduce the heat and let it simmer for about 20 minutes.
  • After simmering, taste your soup and add salt and pepper as desired.
  • If using green beans or kale, stir them in during the last few minutes of cooking.
  • Ladle the soup into bowls, and enjoy with a slice of crusty bread on the side.

Notes

Allow the soup to sit for about 10 minutes before serving to let the flavors deepen. Store leftovers in an airtight container in the refrigerator for up to five days or freeze for longer storage.
