  • 1/2 cup Bread crumbs For a crispy topping that contrasts beautifully with the soft gratin.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Slice the zucchini and onion thinly.
  • In a large skillet, drizzle olive oil and add finely chopped garlic and onion. Cook until softened, about 5 minutes.
  • In a greased baking dish, layer half of the zucchini slices. Sprinkle with salt and pepper, and half of the sautéed onion mixture.
  • Pour half of the heavy cream over the layer, followed by half of the parmesan cheese.
  • Add another layer of zucchini, season this layer, top it with the remaining sautéed onions, and pour the remaining cream over everything. Finish with the rest of the parmesan and sprinkle bread crumbs on top.

Cooking

  • Bake in the oven for 30 minutes, or until bubbly and golden brown.

Notes

For a lighter option, replace heavy cream with Greek yogurt. For a dairy-free alternative, coconut cream works wonders. Add fresh herbs for added flavor.
