  • 4 large yellow onions, thinly sliced caramelized onions are the heart of this dish; don’t rush them
  • 3 tablespoons butter for richness
  • 1 tablespoon olive oil to raise the smoke point
  • 3 cloves garlic, minced for depth
  • 2 tablespoons all-purpose flour helps thicken the sauce (gluten-free substitute: 2 tablespoons cornstarch)
  • 1 cup beef broth low-sodium if preferred; vegetable broth for a lighter flavor
  • 0.5 cup dry white wine optional but adds brightness
  • 1 cup sour cream swap Greek yogurt for a tangier, healthier option
  • 1 teaspoon Worcestershire sauce adds umami
  • 1 teaspoon thyme (dried or 1 tablespoon fresh)

Preparation

  • Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch casserole dish.
  • Heat a large skillet over medium heat. Add butter and olive oil, then the sliced onions. Cook, stirring occasionally, for 20–25 minutes until deep golden and caramelized.
  • Push the onions to the side and add the ground beef to the skillet. Brown, breaking into pieces, until no pink remains. Drain excess fat if desired.
  • Stir in garlic and thyme, cooking for 30 seconds until fragrant. Sprinkle the flour over the mixture and stir for 1 minute; this is when the sauce will begin to thicken.
  • Pour in the wine (if using) to deglaze the pan, scraping any brown bits from the bottom. Add beef broth and Worcestershire sauce; simmer for 3–5 minutes until slightly reduced. Taste and season with salt and pepper.
  • Remove from heat and stir in the sour cream (or Greek yogurt). Fold in the cooked noodles or cubed bread until well coated.
  • Transfer the mixture into the prepared casserole dish. Sprinkle the grated Swiss and Parmesan evenly over the top.
  • Bake for 15–20 minutes, until the cheese is melted and bubbly and edges are lightly browned. For a golden crust, broil for 1–2 minutes at the end, watching closely.
  • Let rest 5 minutes before serving so the casserole sets and slices cleanly. Garnish with chopped parsley and enjoy.

Notes

For a healthier option, use lean ground turkey, Greek yogurt, and whole-wheat noodles. Make it vegetarian by substituting plant-based ground 'beef' and vegetable broth. If you love the soupier texture, mix an extra 1/2 cup broth into the casserole before baking.
