  • 2 cups cooked chicken, shredded or diced Leftover rotisserie chicken works beautifully
  • 1 can (15 oz) black beans, rinsed and drained Swap for kidney beans for a different texture
  • 1 cup frozen corn Fresh corn can add a bursting sweetness
  • 1 cup salsa Use spicy salsa for an added kick!
  • 1 cup shredded cheddar cheese Or a mix of your favorites like Monterey Jack
  • 1 bag frozen tater tots You can use sweet potato tots for a fun twist
  • 1 teaspoon cumin To add a warm, earthy flavor
  • to taste Fresh cilantro, chopped, for garnish Optional but refreshing!

Preparation

  • Preheat your oven to 425°F (220°C).
  • In a large mixing bowl, combine the cooked chicken, black beans, frozen corn, salsa, cumin, and half of the shredded cheese. Mix until everything is well coated.
  • Spread the mixture evenly into a greased 9×13 inch baking dish.

Assembly & Baking

  • Layer the frozen tater tots on top of the chicken mixture.
  • Sprinkle the remaining cheddar cheese over the tater tots.
  • Bake in the preheated oven for 25-30 minutes, or until the tater tots are golden brown and crispy.
  • Garnish with chopped cilantro and serve hot.

Notes

Feel free to customize with healthier swaps or add toppings like avocado. Great for leftovers, store in an airtight container for up to 4 days or freeze for up to 2 months.
