Sauce Ingredients

  • 2 cups Milk To create the creamy sauce; can substitute with almond or oat milk.
  • 4 tbsp Butter Adds richness and helps to create a roux.
  • 0.25 cup Flour For thickening the cheese sauce.
  • 1 tsp Salt To taste.
  • 0.5 tsp Pepper To taste.
  • 0.25 tsp Nutmeg Elevates the flavors.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a large baking dish.
  • Cook the macaroni according to package instructions until al dente. Drain and set aside.

Making the Cheese Sauce

  • In a large saucepan, melt the butter over medium heat.
  • Add the flour and whisk continuously to form a roux. Cook for about 2 minutes until bubbly and golden.
  • Gradually whisk in the milk, ensuring there are no lumps. Heat until thickened.
  • Stir in all the cheeses until they melt into a smooth sauce. Add the nutmeg.

Combining and Baking

  • Combine the cooked macaroni with the cheese sauce, and season with salt and pepper.
  • Transfer the mixture to the greased baking dish and smooth the top.
  • If desired, sprinkle some breadcrumbs over the top for extra crunch.
  • Bake for 20 minutes until golden and bubbly.

Notes

Tips: Add vegetables like steamed broccoli or sautéed spinach. For a meatier dish, stir in cooked bacon or shredded chicken. Spice it up with a pinch of cayenne pepper.
