  • 8 oz Pasta (Spaghetti or penne) Choose whole wheat for a healthier option.
  • 1 lb Italian Sausage Use fresh pork sausage or turkey sausage for a lighter option.
  • 4 cups Fresh Spinach Baby spinach is tender and mild; kale is a good alternative.
  • 3 cloves Garlic Fresh garlic is preferred, but garlic powder is a substitute.
  • 2 tbsp Olive Oil Use extra virgin for a richer flavor.

Cooking Process

  • Begin by boiling a large pot of salted water. Add your pasta and cook according to package instructions, ensuring it's al dente.
  • In a large skillet over medium heat, add the olive oil. Once it’s shimmering, crumble in the Italian sausage. Cook until browned and cooked through—about 6–8 minutes.
  • Stir in minced garlic and cook for an additional minute until fragrant. Then, add the fresh spinach and cook it down for 2–3 minutes until wilted.
  • Once the pasta is cooked, drain it, reserving a cup of pasta water. Toss the pasta into the skillet with the sausage and spinach, adding reserved pasta water until you achieve the desired sauciness.
  • Plate the pasta warm, garnishing with freshly cracked black pepper or Parmesan cheese if desired.

Notes

Leftovers can be stored in an airtight container in the fridge for up to three days. Reheat in a skillet with a splash of water or broth to keep it saucy.
