  • 2-3 pieces Ripe Bananas The riper, the better!
  • 1 cup Peanut Butter Creamy or crunchy, or nut-free alternatives.
  • 2 pieces Eggs Helps bind the muffins together.
  • 1 tbsp Honey or Maple Syrup Optional, but recommended for added sweetness.
  • 1 tsp Baking Soda For rise and texture.
  • a pinch Salt Enhances flavors.
  • 1 tsp Vanilla Extract Adds aromatic flavor.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, mash the ripe bananas until smooth.
  • Stir in the peanut butter, followed by the eggs until well combined.
  • If using, mix in honey or maple syrup.
  • Sprinkle in the baking soda, salt, and vanilla extract. Stir until well-blended.
  • Line your muffin tin with paper liners or grease lightly. Pour the batter evenly into each cup, filling them about ¾ full.

Baking

  • Bake in the preheated oven for 15-20 minutes until golden brown and a toothpick inserted comes out clean.
  • Let the muffins cool in the pan for a few minutes before transferring to a wire rack.
  • Enjoy them warm!

Notes

Add chocolate chips, chopped nuts, or coconut flakes for variations. Store in an airtight container at room temperature for about 3 days or freeze individually for longer storage.
