  • 2 large onions, thinly sliced (golden or yellow work wonderfully)
  • 4 tablespoons butter (opt for unsalted to control salt levels)
  • 2 cups beef broth (or low-sodium for a healthier option)
  • 1 teaspoon fresh thyme (dried works as well, just halve the amount)
  • 1 cup Gruyère cheese, shredded (or Swiss for a more budget-friendly choice)
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional but adds a lovely touch)

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large skillet, melt the butter over medium heat. Add the sliced onions and sprinkle with a pinch of salt. Stir frequently while the onions caramelize for about 15 minutes.
  • Once the onions are golden, pour in the beef broth and add fresh thyme. Simmer for 5-7 minutes.
  • Season the chicken breasts with salt and pepper and place them in a baking dish.
  • Pour the onion broth mixture over the chicken and top with shredded Gruyère cheese.
  • Bake in the preheated oven for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
  • Remove from the oven, let it rest for a few minutes, and garnish with fresh parsley before serving.

Notes

This dish is perfect for Sunday dinners, casual gatherings, or even holiday feasts. Serve with creamy mashed potatoes or crusty bread. For leftovers, cool and transfer to an airtight container; store in the fridge for up to three days.
