  • 1 lb boneless, skinless chicken breasts Substitute with thighs for more moisture
  • 1 cup orzo pasta Use whole wheat for a healthier twist
  • 2 large onions, thinly sliced Yellow onions bring sweetness; feel free to mix in red for extra flavor
  • 3 cups low-sodium chicken broth Homemade adds depth, store-bought is a time-saver
  • 1 cup shredded Gruyère cheese Swap with mozzarella or cheddar if preferred
  • 2 cloves fresh garlic, minced For that aromatic zing
  • 2 tbsp olive oil Can use butter for additional richness
  • to taste Salt and black pepper
  • Fresh thyme and parsley for garnish Dried thyme may also work in a pinch

Preparation

  • In a large skillet, heat olive oil over medium heat. Add the sliced onions and cook, stirring frequently, for about 10-12 minutes until they’re softened and golden brown.
  • Stir in the minced garlic and cook for another 1-2 minutes until fragrant.
  • Push the onions to the side of the skillet and add the chicken breasts. Season them with salt and pepper. Brown for about 3-4 minutes on each side, then remove from heat. Allow the chicken to rest for a few minutes before slicing into bite-sized pieces.
  • In the same skillet, pour in the chicken broth, then add the orzo. Bring the mixture to a gentle boil, then reduce the heat to low and cover, cooking for about 8-10 minutes until the orzo is tender and has absorbed most of the liquid.
  • Stir the cooked chicken and sautéed onions into the orzo, then mix in half of the Gruyère cheese.
  • Transfer everything to a greased baking dish. Top with the remaining Gruyère cheese and bake in a preheated oven at 375°F (190°C) for 10-12 minutes, or until bubbly and golden on top.

Notes

Substitute sour cream with Greek yogurt for a tangy twist without the extra calories. Add in seasonal vegetables like spinach, mushrooms, or bell peppers for more color and nutrition. A splash of white wine while sautéing the onions can add a lovely depth to the flavor profile.
