  • 4 medium Potatoes, peeled and diced Russets or Yukon Golds work best.
  • 1 large Onion, sliced Yellow or sweet onions are ideal.
  • 12 ounces Smoked Polish Sausage, sliced Can substitute with another type of sausage.
  • 2 tablespoons Olive Oil Can substitute with butter for extra richness.
  • 2 cloves Garlic, minced Adds depth of flavor.
  • Salt and Pepper To taste.
  • Fresh Herbs (optional) Such as parsley or thyme, for added freshness.

Preparation

  • Wash, peel, and dice the potatoes. Slice the onion and sausage to desired thickness.

Cooking

  • Heat olive oil in a large skillet over medium-high heat.
  • Add sliced Polish sausage to the skillet and cook until it starts to brown, about 5 minutes.
  • Toss in the sliced onions and sauté for another 3-4 minutes until they soften and become translucent.
  • Add diced potatoes to the mixture and season with salt and pepper. Stir together and let cook for about 15 minutes, stirring occasionally to prevent sticking.
  • When the potatoes are tender, stir in the minced garlic and cook for an additional 2 minutes.
  • Cook longer if you like your potatoes extra crispy.

Notes

Enjoy directly from the pan or serve on plates. Pairs well with a fresh garden salad. Leftovers can be kept in the refrigerator for up to three days, or frozen for up to a month.
