Preparation

  • Roast the Peppers: Preheat your oven to 400°F (200°C). Slice the peppers in half, remove seeds, and place them on a baking sheet, skin side up. Roast for about 20 minutes until charred. Once cool, peel the skin off.
  • Blend Ingredients: In a food processor, combine the cooked chickpeas, roasted red bell peppers, fresh spinach, tahini, nutritional yeast, lemon juice, garlic, salt, and pepper.
  • Process Until Smooth: Pulse until everything is blended into a creamy, spreadable consistency. Scrape down the sides if necessary—you want it velvety!
  • Taste and Adjust: Give your spread a taste test! If you want more zing, add a little more lemon or salt.
  • Chill and Serve: For the best flavor, let it chill in the fridge for at least 30 minutes before serving.
