  • 1 bunch Fresh herbs (parsley or basil) Adds freshness to the dish.

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a baking dish, place the salmon fillets and scatter cherry tomatoes around them.
  • Drizzle generously with olive oil, then sprinkle minced garlic over the top.
  • Crumble feta cheese over the salmon and tomatoes.
  • Season with salt and pepper.
  • Bake for 15-20 minutes, or until the salmon is cooked through.
  • Meanwhile, cook your pasta according to package instructions until al dente. Drain and set aside.
  • Once the salmon and feta are baked, mix everything together with the cooked pasta. Toss in chopped fresh herbs before serving.

Notes

For extra flavor, consider adding spinach or arugula before serving. A pinch of red pepper flakes can add some spice. Swap in seasonal vegetables to keep the recipe fresh throughout the year.
