Main Ingredients

  • 1 lb beef steak (sirloin or tenderloin) Tender cuts make for the best bites; you can substitute with chicken for a leaner option.
  • 3 tbsp unsalted butter For that luxurious richness; feel free to use olive oil if you prefer.
  • 4 cloves garlic, minced Fresh garlic adds depth; shallots can be used for a milder flavor.
  • 1 cup heavy cream Creates that rich, creamy sauce; half-and-half works as a lighter option if needed.
  • 1/2 cup grated Parmesan cheese The star of the sauce; freshly grated will melt beautifully.
  • to taste Salt and black pepper Essential for seasoning; added herbs like thyme or rosemary can elevate the flavor.

Instructions

Preparation

  • Tenderize the Steak: Start by cutting your beef steak into bite-sized pieces. Sprinkle a generous amount of salt and black pepper on the meat, letting it absorb the flavors.
  • Sear the Steak: In a large skillet, melt 2 tablespoons of butter over medium-high heat. Once the butter is bubbling, add the steak pieces in a single layer. Sear them for 2–3 minutes on each side, until they develop a beautiful crust. You’ll know it’s time to flip when the meat releases easily from the pan. Remove the steak and set it aside.
  • Sauté the Garlic: In the same skillet, add the remaining tablespoon of butter and minced garlic. Let the garlic cook for about 30 seconds until fragrant; be careful not to let it burn.
  • Make the Cream Sauce: Pour in the heavy cream, stirring constantly. Allow it to simmer gently for about 2 minutes, watching as it thickens slightly.
  • Add the Cheese: Lower the heat and stir in the grated Parmesan cheese. Keep stirring until it melts and creates a silky sauce, about 1–2 minutes. Season with salt and pepper to taste.
  • Combine: Return the steak bites to the pan, tossing to coat them in that luxurious sauce. Cook for another 2 minutes just to warm them through.
