  • 2 lbs bone-in chicken thighs (or chicken breasts) Juicy and tender
  • 1 lb baby potatoes Creamy texture
  • 4 cloves garlic Minced
  • 1/4 cup grated Parmesan cheese Adds savory depth
  • 1 cup low-sodium chicken broth Keeps chicken moist
  • 1 tsp Italian seasoning Blend of herbs
  • to taste Salt and pepper Brings flavors together
  • Fresh parsley for garnish (optional) Adds color

Preparation

  • Pat the chicken pieces dry with a paper towel and season generously with salt and pepper.
  • Place the baby potatoes at the bottom of your crockpot.
  • Arrange the chicken thighs on top of the potatoes.
  • Sprinkle the minced garlic over the chicken.
  • In a bowl, combine the chicken broth, Parmesan cheese, and Italian seasoning. Stir well and pour over the chicken.
  • Cover and set your crockpot to low for 6-8 hours, or high for 4 hours.
  • About 30 minutes before it’s finished, sprinkle the remaining Parmesan cheese on top.
  • Plate the chicken and potatoes, sprinkle with fresh parsley, and enjoy!

Notes

Add a splash of heavy cream for a creamier sauce. Introduce seasonal vegetables for a festive twist and try different seasonings for extra flavor.
