  • 1 cup Heavy cream Can substitute with plant-based cream for a lighter version.
  • 1 cup Parmesan cheese Freshly grated is ideal; nutritional yeast is a dairy-free alternative.
  • 4 tablespoons Unsalted butter For better control over the saltiness of the dish.
  • 1/4 cup Fresh herbs (parsley or basil) Feel free to experiment with other herbs as desired.

Preparation

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve a cup of pasta water, then drain the rest.

Cooking

  • In a large skillet, melt the unsalted butter over medium heat. Add minced garlic and sauté until golden and fragrant.
  • Stir in the heavy cream and let it simmer for a minute. Gradually mix in the Parmesan cheese, stirring continuously until melted and creamy.
  • Add the cooked pasta to the sauce, tossing to coat evenly. If the sauce is too thick, add some reserved pasta water until you reach your desired consistency.
  • Finish with salt, pepper, and fresh herbs. Toss everything together one last time and serve immediately.

Notes

For a heartier meal, consider incorporating grilled chicken or sautéed shrimp. Mix in seasonal vegetables like zucchini or cherry tomatoes for added flavor. Leftovers can be stored in an airtight container in the refrigerator for up to three days. Reheat with additional cream or pasta water.
