Ingredients
  

For the Kofta

  • 1 pound ground beef Use lean ground beef for a healthier option or swap for ground lamb.
  • 1 small onion, finely chopped Consider using shallots for a milder taste.
  • 2 cloves garlic, minced Feel free to add more if you’re a garlic lover.
  • 1 teaspoon ground cumin Essential for the warm, earthy taste.
  • 1 teaspoon ground coriander Its citrusy notes pair well with cumin.
  • salt and pepper Essential seasonings; adjust to your preference.

For the Quinoa

  • 1/2 cup quinoa Rinse thoroughly before cooking.

For the Tzatziki

  • 1 cup Greek yogurt Opt for full-fat for creaminess or low-fat for a lighter option.
  • 1 cup cucumber, grated Drain excess water to avoid a watery tzatziki.
  • fresh mint or dill Choose your favorite herb to mix into the tzatziki.

Preparation

  • In a small saucepan, combine the quinoa with 1 cup of water. Bring it to a boil, then reduce heat, cover, and simmer for about 15 minutes until fluffy. Set aside.
  • In a large bowl, combine the ground beef, chopped onion, minced garlic, cumin, coriander, salt, and pepper. Mix until well combined.
  • With wet hands, form the meat mixture into small oval-shaped patties or skewers.

Cooking

  • Heat a grill pan or skillet over medium-high heat. Add the kofta, cooking for about 4-5 minutes on each side until browned and cooked through.
  • In a bowl, combine the Greek yogurt, grated cucumber, chopped mint (or dill), salt, and pepper. Stir well and adjust seasoning.

Assembly

  • To serve, start with a generous scoop of quinoa, add the kofta on top, and drizzle with the tzatziki sauce. Garnish with extra herbs if desired.

Notes

For creative variations, add veggies like cherry tomatoes or mixed greens; switch grains if desired; and mix in extra herbs to the tzatziki.
