Preparation

  • Preheat your oven to 350°F (175°C). Butter a 9x13 baking dish or spray lightly with oil.
  • Blanch the green beans in boiling salted water for 3 minutes, then plunge into ice water to keep them bright and crisp-tender. Drain and set aside.
  • In a large skillet, melt butter over medium heat. Add the chopped onion and cook until translucent and fragrant, about 5 minutes.
  • Add mushrooms and cook until they release their juices and turn golden, another 5–7 minutes. Stir in garlic and cook for 30 seconds.

Combining

  • Sprinkle flour over the vegetables and stir to coat. Slowly whisk in the broth and milk, bringing the mixture to a gentle simmer until it thickens into a silky sauce.
  • Remove from heat and whisk in sour cream (or yogurt), nutmeg, salt, and pepper. Taste and adjust seasoning.
  • Fold in the blanched green beans and 1/2 cup of the crunchy onions (or your toasted panko). If using cheese, stir it in now.

Baking

  • Pour the mixture into the prepared dish, sprinkle the remaining crispy onions on top, and bake for 20–25 minutes until bubbly and golden.
  • Let rest for 5 minutes before serving so the sauce settles and the edges caramelize slightly.
