Preparation

  • Preheat your grill to medium-high heat.
  • Remove the husks and silk from the corn. Place the cobs directly on the grill, rotating occasionally, until they are charred (about 10-15 minutes).
  • While the corn is grilling, chop the tomatoes, red onion, and cilantro.
  • Once the corn is grilled and cooled slightly, carefully slice the kernels off the cob. You might want to do this over a large bowl to catch all those delicious kernels!

Assembly

  • In a large bowl, combine the corn kernels, chopped tomatoes, red onion, and cilantro.
  • Gently fold in the diced avocado.
  • Squeeze fresh lime juice over the top, and sprinkle with salt and pepper. Toss lightly to combine.

Notes

Add protein to make it a full meal or spice it with jalapeƱos for extra flavor. Best when consumed fresh, but can be stored in the fridge for up to 2 days.
