Preparation

  • In a bowl, combine olive oil, lime juice, minced garlic, chili powder, cumin, salt, and pepper. Whisk until well incorporated.
  • Place the chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring it’s evenly coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 4 hours.

Cooking

  • Preheat your grill to medium-high.
  • Remove the chicken from the marinade, allowing excess to drip off. Place on the grill for about 6-7 minutes on each side, or until the internal temperature reaches 165°F.
  • In the last few minutes of grilling, add the sliced bell pepper and onion to the grill. Cook until they are charred and tender, about 4-5 minutes.

Serving

  • Remove everything from the grill, let the chicken rest for a few minutes, then slice it thinly. Serve with the grilled veggies.

Notes

For a twist, marinate the chicken overnight for a deeper flavor. Add fresh herbs like cilantro or parsley for an aromatic finish. Try using different types of peppers for varied sweetness and heat.
