Ingredients
  

For the Marinade

  • 1/4 cup fresh lemon juice (about 2-3 lemons)
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons fresh parsley, finely chopped (or 1 tablespoon dried)
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried)
  • 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)
  • to taste Salt and pepper
  • 1 Zest of 1 lemon for an extra zing

For Serving

  • Grilled vegetables or a fresh salad as side dishes

Instructions
 

Preparation

  • In a medium bowl, mix together the lemon juice, olive oil, minced garlic, parsley, thyme, rosemary, salt, and pepper. Whisk until well combined.
  • Place the chicken breasts in a zip-top bag or shallow dish and pour the marinade over them. Ensure the chicken is well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or ideally, overnight.

Cooking

  • Preheat your grill to medium-high heat (about 400°F).
  • Remove the chicken from the marinade and allow excess marinade to drip off. Place the chicken on the grill and cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F.
  • Once cooked, remove the chicken from the grill and let it rest for 5 minutes.

Serving

  • Slice the chicken and serve it with a drizzle of fresh lemon juice if desired.

Notes

For a healthier option, substitute chicken with turkey breasts or use Greek yogurt instead of olive oil in the marinade. Avoid skipping marinade time for better flavor, and always let the chicken rest after cooking.
