Preparation

  • Start by washing your zucchini and slicing it into thick rounds, about half an inch thick.
  • In a large bowl, drizzle the sliced zucchini with olive oil, salt, and pepper. Toss gently to coat and set aside.

Grilling

  • Preheat your grill to medium-high.
  • Place the zucchini slices on the grill and cook for about 4-5 minutes on each side until tender with grill marks.
  • Transfer the grilled zucchini to a serving platter and crumble the goat cheese over the top.
  • Drizzle honey over the zucchini and garnish with freshly sliced basil.

Notes

For added flavor, consider adding other veggies like bell peppers. This dish can also be served with grilled chicken, fish, or a salad. Leftovers can be stored for up to 3 days.
