Preparation

  • Preheat your oven to 400°F (200°C) to ensure that the pastry puffs perfectly.
  • Lightly flour your work surface and roll out one sheet of puff pastry to smooth it out. Cut it into 4 equal squares with a sharp knife.
  • In a medium bowl, combine the diced ham, shredded cheese, and Dijon mustard. Season with salt and pepper. Mix until evenly coated.
  • Scoop a generous spoonful of the filling onto the center of each pastry square. Fold each corner of the pastry over the filling to create a bundle and press the edges together to seal.
  • Place the bundles onto a parchment-lined baking sheet. Whisk the egg and brush it over each bundle for a lovely, golden crust.

Baking

  • Slide the baking sheet into the oven. Bake for 15-18 minutes, or until golden brown and puffed up.
  • Once they are golden brown, remove the bundles from the oven and let them cool for a few minutes before serving.
