Ingredients
  

Dry Ingredients

  • 1 cup whole wheat flour Adds nuttiness and fiber; swap for all-purpose if you prefer a lighter crumb.
  • 2 teaspoons baking powder Gives lift so the bites are airy.
  • 1/4 teaspoon fine sea salt Balances the sweetness.
  • 1/2 teaspoon ground cinnamon Plus extra for coating.

Wet Ingredients

  • 1 large egg Binds and enriches; for egg-free, use a flax egg (1 tbsp ground flax + 3 tbsp water).
  • 3/4 cup plain Greek yogurt Keeps them moist and adds protein; swap for dairy-free yogurt if needed.
  • 1 teaspoon vanilla extract Brings warmth and aroma.
  • 1 tablespoon melted coconut oil or light olive oil A healthy option that helps crisp in the air fryer.
  • 2 tablespoons coconut sugar or brown sugar Keep it unrefined for depth.

Coating

  • 1/4 cup powdered sugar or extra coconut sugar Optional for a classic churro finish.

Instructions
 

Preparation

  • In a medium bowl, whisk together the whole wheat flour, baking powder, salt, and 1/2 teaspoon ground cinnamon.
  • In a separate bowl, stir the egg, Greek yogurt, vanilla, melted coconut oil, and coconut sugar until smooth.
  • Fold the wet ingredients into the dry mixture until just combined; don’t overmix.

Air Frying

  • Preheat your air fryer to 375°F (190°C) for 3 minutes.
  • Scoop tablespoon-sized portions of batter and roll gently between your palms to form small balls.
  • Arrange the bites in a single layer in the air fryer basket, leaving space between each.
  • Cook for 6–8 minutes, flip, and cook another 4–7 minutes until golden and springy.

Coating and Serving

  • Combine 2 tablespoons of sugar with 1 teaspoon cinnamon in a shallow bowl for coating.
  • Toss the cooked bites in the cinnamon-sugar mixture immediately after removing from the air fryer.
  • Serve warm and enjoy your churro bites!

Notes

Store in an airtight container at room temperature for up to 24 hours. For longer storage, refrigerate for up to 2 days or freeze uncoated for up to 1 month.
